So you are a tuna lover and want to go plant-based, but you cannot imagine life without tuna right now. Not to worry, this chickpeas tuna may be what you need to take that bold step in your quest for a healthier you. It is relatively simple and easy to make, providing that you have already cooked your chickpeas (Garbanzo) ahead of time. Yes, they have canned ones, but as much as possible, stay away if you can.
Chickpeas take a relatively long time to boil, but if you soak them overnight, the time taken to cook it will be less. Also, do not be afraid to cook extra and store them in your freezer for future use.
Now let’s learn how to make this delicious plantbased Mocked Tuna using chickpeas or Garbanzo.
Ingredients:
1-2 cups of boiled chickpeas
1/4 cup chopped assorted red bell peppers
One half-chopped red or white onion
1-2 tablespoons vegan mayonnaise
One clove (peg) garlic
Pinch cayenne pepper
1/4 teaspoon garlic powder (optional)
1/4 teaspoon onion powder (optional)
pinch Himalayan pink salt (only if needed)
One teaspoon of Olive Oil
Preparation:
- Place chickpeas in a bowl and crush them.
- Add chopped bell pepper, onion, garlic, mayonnaise, and olive oil, then mix. I prefer to place it in the food processor for a smoother consistency so my kids do not have to pick anything out.
- Taste and add a pinch of pink salt if needed.
- Sprinkle your desired amount of cayenne on top.
How to serve:
You can have it as is, make a sandwich with your favorite bread, add it to a salad or eat it with crackers. You can also make a wrap using lettuce, collard green, or tortillas.
