Craving Met: My Raw Raspberry Lemon Cheesecake Moment

Some cravings whisper. Others sing. Mine danced into the kitchen with a clear request: raw cheesecake; why not make it yourself? It had been a while, and my body knew exactly what it needed; something creamy, nutty, vibrant, and clean. So I listened.

I reached for cashews, lemon juice, dates, Celtic salt, vanilla, and made a silky, satisfying cheese filling. For the base, I blended pecans, macadamia nuts, walnuts, and dates; earthy, sweet, and grounding, Yum! No oven. Just the refrigerator. No preservatives. Just whole ingredients and holy intention.

For the topping, I hand-crushed fresh raspberries mixed with a little maple syrup. I sprinkled on top chia seeds, and added a drizzle of maple syrup. Then I finished it with a touch that felt like sunshine, freshly grated lemon. That bright citrus lifted everything, adding a fragrant, zesty note that made the whole dessert come alive.

Absolutely frozen here but defrosts quickly

Every bite satisfied not just me but my family. Not just physically, but spiritually. It reminded me that honoring our cravings doesn’t have to mean compromise. It can mean creativity. It can mean healing. It can mean grace topped with a little time and intentionality.
